INGREDIENTS
- 4 eggs
- 1.5 teaspoons vanilla
- 4 tablespoons melted butter or melted coconut oil –> Cooled to room temperature
- 2 cups milk
- 2 cups spelt flour (OR 1:1 Gluten Free Flour- I like King Arthur’s)
- dash salt
- Butter/Oil for pan
Instructions
- Combine all wet ingredients together and mix very well. I put my KitchenAid on speed 6 and allow to mix for approximately 2 minutes.
- Mix flour and salt (dry ingredients) in a bowl.
- Add dry ingredients to wet ingredients and again, mix very well. You want your batter to be as thin and smooth as possible.
- Heat your pan, I use my cast iron, over medium heat. Once it is heated, brush lightly with butter or oil and pour in about 1/4 cup of batter.
- As soon as the batter is in the pan, move the pan around to spread it out.
- Once it covers most of the bottom of the pan, let it cook until it is bubbly and golden brown. Gently flip and cook on the other side. Repeat with the remaining batter.
- Use toppings such as cream cheese, nut/peanut butter, homemade whipped cream, bananas, berries, etc. and enjoy these quick and yummy breakfast treats!
